Cinco de Mayo Dinner at Home: Ribeye Steak Fajitas Recipe + More
Happy Cinco de Mayo! As someone who has a great appreciation for Mexican culture and food, I know that being home and not being able to go out to your favorite Mexican restaurant or bar for Margaritas may be hard, but that doesn’t mean you can’t celebrate at home! Have your own a Cinco de Mayo fiesta at home and enjoy some of my favorite Mexican inspired recipes!
Ribeye Steak Fajitas
Ingredients:
2 pounds rib eye steak
1 large red pepper deseeded and sliced into thin strips
1 large yellow pepper deseeded and sliced into thin strips
1 medium red onion peeled and sliced into thin strips
3 tablespoons olive oil
1/2 of a lime
6-8 tortillas warmed
DIY Taco Seasoning
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 of cayenne pepper
1/2 of salt
1 teaspoon ground cumin
Optional Toppings
sour cream
Guacamole
pico de gallo
cilantro
Instructions
Heat oil in pan
Place steak in a dish and rub both sides with olive oil, followed by the DIY Taco Seasoning (chili powder, garlic powder, onion powder, cayenne pepper, ground cumin, and salt).
Place steak in skillet and/or grill pan (I use a cast iron grill pan)
Cook to your desired temp
Add peppers and onions until beef is cooked through.
Squeeze half a lime over the steak and peppers
Let steak rest, then cut in strips
Garnish and enjoy.
Fool Proof Guacamole
Ingredients
3 Ripe Avocados
½ Cup of Chopped Red Onions
½ Cup of Chopped Cilantro
⅓ Cup Chopped Jalapeno
⅛ Cup of Lime Juice
Pinch of Salt
Instructions
Place Avocados in a bowl and mash with a fork - You will want to leave it a little chunky.
Add all the other ingredients and mix
Sparkling Spicy Margaritas
Ingredients:
4 oz of simple syrup ( simple syrup recipe)
4 oz of fresh squeezed lime juice
1/2 large green jalapeno pepper, sliced thin
3 & ½ oz of Tequila
½ cup San Pellegrino or club soda
Sugar or salt for rim of glasses
Slices of lime for garnish
Directions:
Pour all ingredients in shaker and shake well.
Spread the sugar evenly onto a plate.
Use one of the squeezed lime wedges to moisten the rim of your glasses.
Then, place the glass upside down into the plate of sugar, making sure that the rim of the glass is coated with the sugar ( twist the glasses around in the sugar a few times to give a thicker sugar rim).
Slice jalapenos and limes thinly and place aside ( take out the seeds to lessen the spice)
Pour margarita over ice and add jalapenos
Place additional limes in each glass.
