Quick & Easy Sunday Dinner : BBQ Marinated Spatchcocked Chicken with Sautéed Green Beans Recipe
Sunday dinners have been one of the things that have helped me create a sense of normalcy during these very abnormal times. If you’ve been following along with my IG stories, a typical Sunday for me includes streaming my church’s Sunday service, a trip to the farmer’s market, and then bringing said ingredients from the farmer’s market home and creating a meal.
This past Sunday, I felt like having roast chicken but wanted to liven it up a little, so I decided to try out this new JL Kraft BBQ Marinade in a Bag (gifted by Influenster). I knew I wouldn’t be able to fit the whole chicken in the bag while it was fully intact, so I decided to spatchcock it. (see video here). After spatchcocking the chicken, I put the chicken in the marinade bag, added some lemons and fresh thyme, and then let it marinate in the refrigerator for an hour. Fast forward, I cooked the chicken in the oven on a cast iron grill pan and 45 minutes later, I had the juiciest and most flavorful chicken! I literally said “wow this is so good!” out loud while standing in my kitchen by myself. I paired it with some sautéed green beans and it was the perfect summer Sunday dinner with very minimal clean up!

BBQ Marinated Chicken
Ingredients:
1 Whole Chicken
1 JL.Kraft Marinade Bag
1 bunch of fresh thyme
1 lemon
Salt & Pepper to taste
Instructions:
Clean and spatchcock chicken
Add chicken to JL. Kraft Marinade bag
Add fresh thyme and lemons
Marinate for at least an hour
Spray grill pan with cooking spray and lay flat on the pan
Cook in the oven for 45 min at 425 degrees
Green Beans
Ingredients:
1 lb of fresh green beans
1 tbsp of butter
1 1/2 tsp of minced garlic
Instructions:
In a large skillet add 1/4 cup water and the green beans on high heat and bring to a boil, cooking for 3 minutes. Remove water and add in the butter and garlic, stirring and cooking until fragrant.
